Cream puffs..home made no doubt!

Cream Puff heaven!


Bake them....


Fill them with yummy pudding, flavor of your choice....


Sprinkle them with powdered sugar...

And serve them up!


Your filling: Vanilla pudding ~ chilled


Preheat oven at 400 degrees


The puffs:


1 cup water

6 tablespoons unsalted butter (you can use salted butter, but then omit the salt)

1 teaspoon sugar

1/4 teaspoon salt (if using salted butter leave this out)

1 cup all-purpose flour

3 1/2 eggs ( 3 whole eggs and one egg white)


In a medium size pan combine WATER, BUTTER, SUGAR, SALT. At medium high heat , bring to a boil. Lower temperature to low and add your flour. Stir the mixture until it forms a ball. Transfer the pastry to your mixing bowl…LET IT COOL. Once cooled (10 minutes) turn on the mixer and add one egg at a time. The batter will be sticky and gooie…keep beating the pastry until it is smooth and thick (still a little sticky). Then using a tablespoon drop mounds of the dough onto a parchment lined sheet. Bake at 400 degrees for 15 minutes and then lower the temp to 350 and bake for 25 minutes more. They should be golden brown and crisp. Once the have cooled, split in half with a serrated knife. Fill with vanilla pudding or what ever flavor you so choose, sprinkle with powdered sugar and enjoy!

I made these a few weeks ago for Dave and the kids and they were a big hit! I plan on surprising my Bible study group next week with these little treasures as well...they are simply delightful!

I love cream puffs and that's why I am on Jenny Craig right now...too many cream puffs and all the other good things I love so much!! I only make the sweets now when I know I'm having company so I can eat a couple and send them all away to someone else's house.
