Snow day equals homemade Granola


Homemade Granola


4 cups old-fashioned oats (not instant)
1/2 cup sliced almonds
1/2 cup chopped walnuts
1/2 cup chopped pecans
1/2 cup sunflower seeds
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup packed brown sugar
1/2 cup honey
1/3 cup vegetable oil
2 teaspoons vanilla extract
Optional: Dried fruit

Position rack in middle of oven and preheat oven to 375o F. Mist a large rimmed baking sheet with cooking spray. Mix oats, nuts, sunflower seeds, cinnamon and salt in a large bowl.

In a saucepan, combine brown sugar, honey and oil and bring to a simmer over medium heat. Remove from heat and carefully stir in vanilla. Pour hot liquid over oat mixture, stir and toss until thoroughly mixed.

Spread granola on baking sheet and bake until golden brown, 18 to 20 minutes, stirring occasionally (3x during the baking process) to ensure even baking. Warning: Granola can go from perfectly brown to burnt in one minute, really watch it.

Transfer granola to a large bowl and let it cool, stirring occasionally.

Very similar to my own granola recipe. Yum!
Snow day? I'm jealous. It is unseasonably warm here, which is sort of discouraging when one is preparing for Thanksgiving and doing some Christmas shopping....

Yummy! I will try this...even in the summer here it would be great with yogurt.
