Vanilla Fruit Dessert

(My mom gave me these beautiful little dessert serving dishes. The ice goes in the bottom portion of the cup and your dessert goes into the little cup that sits on top of the cup with ice the in it. They are so adorable and fun to serve special desserts or shrimp dishes in.)


I tried this for the first time the other night with dinner and it was delightful. This was light refreshing, yummy and very easy to make.


1/2 cup cold milk
1 package (3.4 ounces) instant vanilla pudding. (I used french Vanilla,...why not?)
1 cup Vanilla yogurt
1/2 cup orange juice concentrate
4-6 cups assorted fruit (Apples, grapes,mandarin oranges, banana's, blueberries, etc)

In a mixing bowl, combine the milk, instant pudding mix, yogurt and orange juice concentrate. Beat on low speed for 2 minutes.

To serve this you just poor some of the pudding mixture over the top of your fruit. I mixed some fruit with the pudding mixture and added it to the bottom of my dessert bowl. Than I added fruit to the top of that and poured just a little of the pudding mixture on top to make it look nice.
Refrigerate any leftover topping.

This was a very refreshing fruit dessert and I will for sure be making this one again.

This recipe just hollers "Brunch for the girls!" Or maybe just, "Good for you, but tastes bad for you." Either way.

I'll spare you the details of what I've made in the last few days, for my family meals. I'm more inspired,though, after reading your recipes!

Hello Christine!
Girl, you are going to be the death of me with all your yummy recipes. As I'm reading this one I'm thinking, non-fat milk, sugar free pudding ... NOT!!!
I know I said I was going to make your bread for the Superbowl party we are going to tomorrow. But it is 80 degrees here in So Cal, and I just don't have the heart to turn on my oven. But I will make it - and I'll let you know!!! Maybe I should make this dessert ...
