Sweet and Sour Chicken

I found this really good sweet and sour chicken recipe on "Yummy eats" blog and thought I'd give it a try. Not only was this a wonderful recipe it was so quick and easy to make not to mention the family loved it! Instead of Chicken I used pork chops and I served it with home made apple sauce, mashed potatoes and peas - I can't wait to try it on chicken!

She said it was fine to share her recipe here...so here goes.

Let me know if you try this tasty little dish and if you get a chance take a trip over to her blog and see what's cooking today!

Sweet and Sour Chicken

Ingredients:
3-4 boneless skinless chicken breasts ( I like to cute mine into tenderloins..stretches the chicken a little bit more.... I think it takes in more of the flavor too when it's cut into thinner pieces.) 1 ~ 8 oz. bottle Russian dressing 1 ~ 10 oz jar apricot-pineapple preserves 1 packet dry onion soup mix

Preheat your oven to 375. Wash your chicken breasts, and put your chicken into a baking dish. I use a 13 x 9 dish. In a medium mixing bowl put the dressing, preserve and soup mix and mix well.

Pour over the chicken. Bake for 30 minutes or until done.

Serve over rice or mashed potatoes

~ enjoy
